Vegan Banana Bread Recipe

I probably bake banana bread more often than the usual amount. To be fair though, the clinic I work at buys bananas for the patient waiting room. So, when they don't get eaten, I ask if I can take them to prevent them from being wasted. Therefore, I bake banana bread at least once a month. I used to google a banana bread recipe online each time I baked. I would forget the recipe that I used the time before and just give it another go. My boss at work is very honest and tells me exactly what she thinks about my banana bread each time. This has been super helpful though! I took her insight and combined all my previous knowledge from recipes for banana bread and created this vegan banana bread recipe. All my coworkers seem to love it and it is generally gone within hours of coming to work. Hopefully you'll love it just as much.

INGREDIENTS:

  • 2-3 ripe bananas 
  • 1 tsp vanilla extract
  • Flax mixture (1 tbs ground flax seed/ 3 tbs water) 
  • 1/3 cup melted coconut oil
  • 1/2 cup sugar
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • Pinch of salt

(When I cook/bake, I keep a bowl on the counter to put my food scraps in until completely done, then I transfer them to the tin in my freezer to prevent having to open the freezer multiple times while cooking.)

 

 

 

PREHEAT OVEN TO 350F OR 176C

1. Mash the bananas in a bowl (First I slice up with knife, then mash with fork or pestle)

2. Add vanilla

3. Add flax mixture and mix

4. Add melted coconut oil (I generally melt in microwave for 30sec-1min)

5. Add sugar and mix

SEPARATE BOWL:

Combine flour, baking soda and salt

6. Add flour mixture to wet mixture and fold in with wooden spoon

7. Grease a loaf pan with coconut oil

Bake for about 45 minutes or until a fork can be pulled out clean. 

Let cool on baking rack, slice and serve :)
